Vegan Meal Prep - 3 Healthy Lunches For The Week!

In another life I would be an organized person that never puts anything to the last minute. I'm trying really hard not to be such a huge procrastinator which is why I've started meal prepping on Sundays for the week ahead!


Although I am vegetarian and not vegan, I eat vegan when I can. This week I've just put out a video on my youtube channel that will show you how I prepared 3 different recipes for 5 days worth of food for 2 people.

1. Couscous & Tempeh Bowls
2. Veggie Quinoa Wraps
3. Tomatoe & Avocado Sandwiches

Ingredients used in total:
couscous, tempeh, quinoa, yellow zuccini, red bell pepper, avocado, tomatoe, shredded carrots, sprouts, onion, celery, mushrooms of choice, iceberg lettuce, spinach, pine nuts, hummus, mustard, olive oil, tortilla wraps, slices of bread, seasoning.

Making the entire thing took me about 1.5 hours, however I was also filming at the same time, so I think you could do it in 1. The meals prepared are extremely nutritious and very filling!
