Eggplant & Tomato Stacks - 10 min Recipe!

Happy Thursday everyone,

Here's a super quick dinner recipe in case you're in a hurry! You only need a few ingredients and just a little bit of time.

INGREDIENTS:
1 eggplant, cut in 1 1/2 inch slices
1-2 tomates, cut in 1 inch slices
Cheese of choice (I chose a cheddar/mozzarella blend)
Olive oil
Parsley

DIRECTIONS:
1. Fry the eggplant in oil for about 3-4 minutes on both sides on medium heat.
2. Lower the heat and top the eggplant with the tomatoes and cheese, cover with a lid and leave on for about 3 minutes.
3. Sprinkle with parsley
4. Give it 5 minutes to cool and then eat it all!

That's it. Good food doesn't need to be complicated :)
